White Bean Dip

Ingredients:

  • 1 head garlic
  • ½ cup (plus ½ teaspoon) olive oil
  • 2 (15 ounce) cans white beans (drained and rinsed)
  • ½ cup Parmesan cheese (grated)
  • Grated zest of 1 lemon
  • 1 tablespoon fresh rosemary or thyme leaves (packed)
  • ½ teaspoon salt
  • ½ teaspoon ground black pepper

Directions

Preheat oven to 350° F.

Cut half an inch from the top of the head of garlic to expose cloves. Put on a sheet of foil and drizzle ½ teaspoon oil over cloves. Wrap in foil and roast until garlic is soft, about 45 minutes. Let cool.

Meanwhile, puree beans and cheese in food processor until smooth, scrapping down sides.

Unwrap roasted garlic and squeeze upside down over food processor to release cloves into mixture. Add ½ cup olive oil and puree until smooth. Add lemon zest, rosemary or thyme, salt and pepper; pulse until chopped.
