Vidalia Onion Casserole
Ingredients:
- 3 large Vidalia onions
- 1 can mushroom soup
- 1 tube snack crackers
- 1 cup cheddar cheese (grated)
- 1 pound hot sausage
- 1 small jar pimentos
Directions
Preheat oven to 400° F. Spray large casserole dish with cooking spray.
Slice onion and make into rings. Spread one layer of onion in bottom of dish until covered. Spread crackers over onion layer.
Brown sausage and drain. Spread over cracker layer.
Layer remaining onions over sausage until covered completely.
Spread one can of mushroom soup over onion layer.
Spread cheddar cheese over soup and sprinkle pimentos over top for color.
Bake in covered dish for one hour.
