Turkey Meatball Gyro

Ingredients:

  • 1 pound lean ground white meat turkey
  • 1 large egg white
  • 4 scallions (2 finely chopped and 2 thinly sliced)
  • 2 tablespoons fresh dill (chopped)
  • 1 teaspoon cumin
  • ½ teaspoon coriander
  • Kosher salt
  • Freshly ground black pepper
  • 1 lemon (halved)
  • 2 peppers (1 orange and 1 red, quartered, then thinly sliced crosswise)
  • 1 jalapeño (seeded and thinly sliced)
  • 1 cup small grape or cherry tomatoes (halved)
  • 1 tablespoon extra-virgin olive oil
  • ½ cup plain Greek yogurt
  • 4 thin pitas

Directions

Heat broiler and line a large rimmed baking sheet with nonstick foil.

In a large bowl, combine the turkey, egg white, chopped scallions, dill, cumin, coriander, and ½ teaspoon each salt and pepper. Shape the mixture into 20 small patties and place on the prepared sheet. Broil until just cooked through, 4-5 minutes. Squeeze the juice of half a lemon over the top.

In a clean bowl, squeeze the juice of the remaining lemon half. Add the peppers, jalapeño, tomatoes, oil, sliced scallion, and ¼ teaspoon each salt and pepper and toss to combine.

Spread the yogurt on the pitas, top with the burgers and spoon the pepper relish over the top.
