Texas Caviar
Ingredients:
- ¼ cup red wine vinegar
- ¼ cup vegetable oil
- ½ teaspoon salt
- 1 teaspoon ground cumin
- ½ teaspoon ground black pepper
- 1 garlic clove (minced)
- 1 (12 ounce) bag frozen corn (thawed)
- 1 cup scallions (finely chopped)
- ½ cup pickled jalapeño peppers
- 1 (12 ounce) jar roasted red peppers (drained, rinsed and chopped)
- 1/3 cup fresh cilantro (chopped)
- 2 (15 ounce) cans black-eyed peas (drained and rinsed)
- Tortilla chips
Directions
Whisk together first six ingredients in a large bowl.
Add corn and remaining ingredients; toss gently.
Chill until ready to serve with chips on the side.
