Texas Caviar

Ingredients:

  • ¼ cup red wine vinegar
  • ¼ cup vegetable oil
  • ½ teaspoon salt
  • 1 teaspoon ground cumin
  • ½ teaspoon ground black pepper
  • 1 garlic clove (minced)
  • 1 (12 ounce) bag frozen corn (thawed)
  • 1 cup scallions (finely chopped)
  • ½ cup pickled jalapeño peppers
  • 1 (12 ounce) jar roasted red peppers (drained, rinsed and chopped)
  • 1/3 cup fresh cilantro (chopped)
  • 2 (15 ounce) cans black-eyed peas (drained and rinsed)
  • Tortilla chips

Directions

Whisk together first six ingredients in a large bowl.

Add corn and remaining ingredients; toss gently.

Chill until ready to serve with chips on the side.
