Sweet Onion and Herb Gravy

Ingredients:

  • 6 tablespoons unsalted butter
  • 1 sweet onion (chopped)
  • 2 garlic cloves (chopped)
  • 1/3 cup all-purpose flour
  • 6 cups chicken stock
  • ¾ cup dry white wine
  • 2 tablespoons fresh flat-leaf parsley (chopped)
  • 2 tablespoons fresh chives (chopped)
  • 1 tablespoon fresh thyme (chopped)
  • Kosher salt and freshly ground black pepper

Directions

Melt butter in a large straight-sided skillet over medium-high heat. Add onion, and cook, stirring occasionally, until golden brown, 10-12 minutes. Add garlic, and cook 1 minute.

Sprinkle flour over onion, and cook, whisking, until flour is golden brown, 1 minute.

Slowly whisk in stock and wine. Cook, whisking often, until reduced to 3 cups or until gravy reaches desired thickness, 45-50 minutes.

Strain through a fine mesh sieve; discard solids. Stir in parsley, chives, and thyme. Season with salt and pepper.
