Squash Puffs

Ingredients:

  • 1 cup cooked yellow squash (mashed)
  • 1 egg (beaten)
  • 1/3 cup flour
  • 1/3 cup cornmeal
  • 1 teaspoon baking powder
  • 1 teaspoon salt
  • 1 medium onion (finely chopped)
  • Oil for frying

Directions

Add egg to the mashed squash.

Combine all dry ingredients.

Add squash and onion, stir well.

Drip by spoonfuls into hot oil. Flip over during cooking.
