Southwestern Style Rice
Ingredients:
- Non-stick spray
- 4 links spicy smoked sausage (sliced)
- 2 cups frozen Southwest mixed vegetables
- 1 (24 ounce) can zesty pasta sauce
- 1 (14.5 ounce) can petite diced tomatoes (drained)
- 6 cups hot cooked white rice
Directions
Spray a skillet with non-stick spray; heat over medium-high heat.
Add sausage, cook 2 minutes or until lightly browned. Add vegetables and cook 2 more minutes.
Add pasta sauce and tomatoes to skillet; reduce heat and simmer 5 minutes.
Serve over rice.
