Southern Soda Bread

Ingredients:

  • 4½ cups all-purpose flour
  • 2/3 cup sugar
  • 4½ teaspoons baking powder
  • 1½ teaspoons baking soda
  • 1½ teaspoons salt
  • 3 cups buttermilk
  • 3 large eggs (lightly beaten)
  • 4½ tablespoons butter (melted)

Directions

Preheat oven to 350° F.

Whisk together first 5 ingredients in a large bowl. Make a well in center of mixture. Add buttermilk, eggs, and butter, whisking just until thoroughly blended. (Batter should be almost smooth.) Pour batter into 2 lightly greased 8½x 4½ inch loaf pans.

Bake at 350° F for 45 minutes. Rotate pans in oven, and shield with aluminum foil. Bake 30-35 minutes or until a long wooden pick inserted in center comes out clean.

Cool in pans on a wire rack 10 minutes. Carefully run a knife along edges of bread to loosen from pans. Remove from pans to wire rack, and cool completely (about 1 hour).
