Soft Boiled Eggs with Cheesy Toast


  • 2 large eggs
  • 1 handful extra-sharp cheddar cheese (shredded)
  • 1 slice toast
  • Salt
  • Freshly ground black pepper


Fill a small saucepan with water and bring to a boil. Once the water is boiling, reduce to a rapid simmer and carefully drop in the eggs. Cover and cook for 7 minutes.

While the eggs are cooking, set your oven to broil. Pile on a handful of cheese on your toast, place on a baking sheet and broil for a few minutes. When the cheese is melted and starts to brown, remove the toast from the oven.

When your timer buzzes, run the eggs under cold water then peel them. Smash over the toast and sprinkle with salt and pepper.
