Rosewater Pavlova

Ingredients:

  • 4 egg whites
  • 1 cup caster sugar
  • 1 tablespoon corn flour
  • 1 tablespoon white vinegar
  • 600 milliliters thick or double cream
  • Icing sugar (for dusting)
  • A mixture of blueberries, blackberries and mulberries
  • 1 teaspoon rosewater

Directions

Set the oven to 300° F.

Beat egg whites until frothy. Add in sugar and continue to beat until mixture is glossed and white. Add in corn flour, vinegar, rosewater and beat again.

Shape into a round heap atop baking tray, bake for one hour on 250° F.

Allow meringue to cool then top with cream and heap on berries, sifting over icing sugar to finish.
