Red, White and Blue Skillet Cobbler

Ingredients:

  • 1½ cups fresh blueberries
  • 1½ cups fresh strawberries (hulled and quartered)
  • ¼ cup flaked sweetened coconut
  • Juice and zest of 1 lemon
  • ½ cup sugar
  • 1 teaspoon vanilla extract
  • 1 golden yellow cake mix
  • 1 egg
  • ½ cup water
  • 1 tablespoon butter or coconut oil
  • Ice cream for serving (optional)

Directions

In a large bowl, combine the blueberries, strawberries, coconut, lemon juice and zest, sugar, and vanilla extract. Let mixture macerate for 10 minutes.

Meanwhile, heat oven to 350° F.

Combine cake mix, egg, and water.

Coat a 10½ inch cast-iron skillet with butter or coconut oil. Add berry mixture to prepared skillet. Pour in batter and stir to bring a few berries to the top.

Bake for 25 minutes or until cobbler is bubbling and golden.

Cool 5 minutes, and serve warm with ice cream, if desired.
