Pumpkin Bars with Cream Cheese Frosting

Ingredients:

  • 2 cups all-purpose flour
  • 1 teaspoon baking powder
  • ½ teaspoon baking soda
  • 1 teaspoon kosher salt
  • 2 teaspoons cinnamon
  • ¼ teaspoon ground nutmeg
  • ¼ teaspoon ground ginger
  • 3 large eggs
  • 1 cup vegetable oil
  • ¾ cup brown sugar (lightly packed)
  • ½ cup granulated sugar
  • 1 (15 ounce) can pumpkin puree
  • Cream Cheese Frosting
    • 1 (8 ounce) block cream cheese (softened)
    • ½ cup butter (softened)
    • 2 cups powdered sugar
    • 1 teaspoon cinnamon
    • 1 teaspoon pure vanilla extract
    • Pinch kosher salt

Directions

Preheat oven to 350° F and spray a 9x13 inch baking pan with cooking spray.

In a large bowl whisk together flour, baking powder, baking soda, salt, cinnamon, nutmeg, and ginger.

In a separate large bowl, whisk together eggs, oil, sugars, and pumpkin. Add dry ingredients to wet ingredients and stir until just combined. Pour batter into prepared baking sheet and bake until a toothpick inserted into the middle comes out clean, about 30-35 minutes. Let cool.

In a large bowl using a hand mixer (or in the bowl of a stand mixer fitted with the paddle attachment), beat together cream cheese and butter until fluffy. Add powdered sugar and beat until combined then add cinnamon, vanilla, and salt.

Frost bars with an offset spatula then cut into squares to serve.
