Pineapple Mango Salsa Chicken Lettuce Wraps

Ingredients:

  • 2 cups chicken (shredded)
  • 1 tablespoon olive oil
  • ½ teaspoon paprika
  • 1 tablespoon lime juice
  • ½ teaspoon garlic powder
  • ¼ teaspoon salt
  • 1 cup pineapple mango salsa
    • 1 cup mango (chopped and peeled)
    • 1 cup pineapple tidbits
    • ½ cup sweet red pepper (diced)
    • 1 plum tomato (seeded and chopped)
    • 3 tablespoons fresh cilantro (minced)
    • 2 green onions (sliced)
    • 2 tablespoons lime juice
    • 1 tablespoon lemon juice
    • 1 jalapeño pepper (finely chopped)
  • 10 leaves romaine lettuce

Directions

Bring a pot of water to a boil and boil chicken on the stove for 10 minutes (or use rotisserie chicken).

While chicken is cooking, combine the salsa ingredients. Cover and refrigerate for 1 hour or until chilled.

Toss cooked, shredded chicken with olive oil, paprika, garlic powder, salt and lime juice

Assemble lettuce wraps layering chicken and salsa. Top with avocado or additional lime juice for flavor.
