Nutmeg Thyme Bread

Ingredients:

  • 2 cups flour
  • 1 cup sugar
  • 1 tablespoon baking soda
  • 1 teaspoon salt
  • 1 teaspoon nutmeg
  • 1 cup (plus extra for garnish) thyme sprigs (minced)
  • 1 egg (beaten)
  • 1 cup applesauce
  • 1 cup vegetable oil
  • 1 cup walnuts

Directions

Preheat oven to 350° F.

Mix the dry ingredients except thyme and walnuts. Combine thyme, egg, applesauce, and oil. Add to the dry mixture. Mix in walnuts.

Pour batter into two greased loaf pans. Sprinkle top with dried thyme.

Bake 45 minutes. Cool, remove from pans.

Make a sweet sauce to pour over slices when served (make an herb tea, add honey, thicken with cornstarch).

It freezes well, as the flavor enhances as it ages.
