Nachos

Ingredients:

  • 1 bag restaurant style tortilla chips
  • 1 pound ground beef
  • 8 ounces pepper jack cheese (shredded)
  • 8 ounces medium cheddar cheese (shredded)
  • 1 red onion (chopped)
  • 2 jalapeño peppers (sliced)
  • 3 radishes (sliced)
  • 1 can sliced black olives
  • 2 tablespoons ground cumin
  • 2 tablespoons chili powder
  • 1 sprig of fresh cilantro (finely chopped)
  • 2 tablespoons olive oil

Directions

Preheat oven to 350° F.

In a large sauté pan over medium heat, sauté ¾ of the chopped red onion in olive oil until soft.

Add ground beef and sauté until browned. Add cumin and chili powder. Stir until beef is coated.

Line the bottom of a cast iron skillet with a layer of tortilla chips.

Spoon a layer of the cooked beef mixture over the chips. Top beef with shredded cheddar and pepper jack cheeses.

Add sliced jalapeños, sliced black olives, remaining chopped red onion and sliced radishes on top of cheese.

Sprinkle with finely chopped cilantro.

Place skillet in oven and bake for 15 minutes.

Remove skillet with oven mitt, serve.
