Mushroom Beef Skewers

Ingredients:

  • 8 (10 ounce) boneless strip steak (about 1¼ inch thick, cut in 1½ inch thick chunks)
  • 8 ounces fresh whole white mushrooms
  • 1½ cups zucchini and/or yellow summer squash (cut in 1 inch chunks)
  • 2 tablespoons olive oil
  • 1/3 cup smooth peanut butter
  • 2 teaspoons soy sauce
  • 1 teaspoon rice wine vinegar
  • ½ teaspoon ground cumin
  • ¼ teaspoon ground red pepper
  • ¼ cup water
  • Salt and black pepper

Directions

Preheat broiler.

On 4 (12 inch) skewers alternately thread steak, mushrooms and squash. Place skewers on a rack of a broiler pan; lightly brush with oil. Season with salt and black pepper, if desired.

Broil 4-5 inches from heat is medium-rare, about 10 minutes, turning and brushing occasionally with oil.

Meanwhile, in a small bowl combine peanut butter, ¼ cup water, the soy sauce, vinegar, cumin, and red pepper; serve with skewers.

Garnish skewers with cherry tomatoes, if desired.
