Minestrone
Ingredients:
- 3 cups chicken broth
- 2 cups frozen mixed vegetables
- 1 (14.5 ounce) can Italian diced tomatoes
- 1 cup water
- ½ cup whole wheat elbow macaroni
- Parmesan cheese (finely shredded, optional)
- Salt and pepper to taste
Directions
Combine chicken broth, mixed vegetables, tomatoes, water and macaroni in a medium saucepan and bring to boil.
Reduce heat and simmer, partially covered and stirring occasionally, until pasta is just tender and vegetables are cooked, 5-7 minutes.
Season with salt and pepper to taste.
Serve, sprinkled with Parmesan, if desired.
