Layered Pumpkin Cheesecake Bars

Ingredients:

  • 2 cups all-purpose flour
  • 1 cup confectioner's sugar
  • 2 sticks unsalted butter (softened)
  • Pumpkin Layer
    • 1 (8 ounce) package cream cheese (softened)
    • ¾ cup sugar
    • 1 (15 ounce) canned pumpkin puree
    • 1½ teaspoons pumpkin pie spice
    • 3 eggs
  • Cheesecake Layer
    • 2 cups sour cream
    • ½ cup sugar
    • ½ teaspoon vanilla extract

Directions

Preheat oven to 350° F. Line a 9x11 pan with parchment paper.

In a large bowl, mix the flour and confectioner's sugar together. Add in butter and incorporate together with your hands until it forms a crumbly crust.

Press the mixture into prepared pan, and bake for 20 minutes, or until golden brown. Remove from oven.

In large bowl of an electric mixer, beat cream cheese, sugar, pumpkin puree, pumpkin pie spice, and eggs on medium speed until well blended. Pour over hot base.

Return to oven and bake for another 20-25 minutes, or until set and dry in center. Remove from oven.

In small bowl, mix sour cream, sugar, and vanilla extra. Pour mixture over pumpkin layer and spread evenly. Bake for an additional 5 minutes or until topping is set.

Cool completely, about 2 hours.
