Key Lime Pie

Ingredients:

  • 1 (9 inch) graham cracker pie crust
  • 3 large egg yolks
  • 2 (14 ounce) cans sweetened condensed milk
  • 1 cup key lime or lime juice
  • 1 cup whipping cream
  • 1 tablespoon powdered sugar
  • ½ teaspoon vanilla extract

Directions

Place pie crust on a medium baking sheet, set aside.

Place egg yolks in a large bowl; using an electric mixer on high, beat egg yolks until light and fluffy.

Reduce speed to medium; gradually add condensed milk. Beat until thickened (about 2 minutes). Reduce speed to low; slowly add lime juice until just combined.

Transfer to pie crust (crust will be very full). Bake in a preheated 350° F oven until filling is set (about 15 minutes). Remove from oven; allow to cool completely.

In medium bowl, combine whipping cream, sugar and vanilla. Using an electric mixer on high speed, beat until stiff peaks form. Serve with slices of pie.
