Honey and Wheat Potato Bread
Ingredients:
- 1 (¼ ounce) package dry yeast
- 1½ cups warm water
- 5-5½ cups white flour
- 2 cups whole wheat flour
- 2/3 cup butter (softened)
- 1 cup warm mashed potatoes
- 2/3 cup honey
- 2 eggs
- 1½ teaspoons salt
Directions
Dissolve yeast in warm water; let stand 10 minutes.
Add 2 cups of the white flour, the whole wheat flour, butter, potatoes, honey, eggs, and salt. Beat until smooth. Stir in enough remaining flour to make dough easy to handle.
Turn dough onto floured surface; knead until smooth and elastic.
Place in greased bowl; turn greased side up. Cover; let rise until double in size.
Punch down dough; divide in half. Shape each half into loaf.
Place each into greased 9x5 inch loaf pans. Cover; let rise until double in size.
Bake in a 350° F oven for 25-35 minutes, or until golden brown.
Brush tops with melted butter.
