Hearty Southwest Turkey and Black Bean Chili

Ingredients:

  • 1 (19 ounce) package fresh ground turkey
  • 1 large Vidalia sweet onion (chopped)
  • 3 cloves garlic (minced)
  • 1 red pepper (chopped)
  • Salt and black pepper to taste
  • 3 tablespoons brown sugar
  • 1 tablespoon chili powder
  • 1 tablespoon cumin
  • 1 tablespoon ground coriander
  • 1 tablespoon cocoa powder
  • ½ teaspoon crushed red pepper (or more to increase heat)
  • 2 (15.5 ounce) cans diced tomatoes (drained)
  • 1 cup canned or frozen corn (rinsed and drained)
  • 1 (8 ounce) can tomato sauce
  • 1 (6 ounce) can tomato paste
  • 1 cup water
  • 2 (15.5 ounce) can black beans (drained and rinsed)
  • ½ cup sharp cheddar cheese (shredded, optional)
  • ½ cup fresh cilantro (chopped, optional)
  • ½ cup green onion with tops (chopped, optional)

Directions

In a large pan, brown turkey meat with onions and garlic, pepper, salt and black pepper. Cook until turkey no longer appears pink, breaking up meat into small pieces as you brown. Drain excess juices.

Reduce heat to medium low and add remaining ingredients (except cilantro, cheese and green onions), simmer for 30-45 minutes until desired consistency achieved.

Serve hot and garnish with cheddar cheese, cilantro and chopped green onions to taste.
