Fried Egg Sandwich with BBQ Bacon

Ingredients:

  • 8 (½ inch thick) country-style bread slices
  • 2½ tablespoons butter (melted)
  • 4 American cheese slices
  • 2 cups butter lettuce (chopped)
  • 8 BBQ Bacon slices
  • ¼ cup mayonnaise
  • 4 fried eggs

Directions

Preheat broiler with oven rack 5 inches from heat.

Brush bread with butter. Broil on an aluminum foil-lined baking sheet 1-2 minutes on each side or until lightly toasted.

Top each of 4 bread slices with 1 cheese slice, ½ cup lettuce, and 2 bacon slices. Spread mayonnaise over remaining bread slices.

Carefully place 1 fried egg on each sandwich; top with remaining bread slices.
