• 1 multigrain English muffin (split)
  • Nonstick cooking spray
  • 2 slices Canadian bacon or lean deli ham
  • 1 large egg
  • 1 slice cheddar cheese
  • 1/3 cup arugula leaves
  • 2 slices tomato


Toast English muffin and keep warm.

Spray a nonstick skillet with cooking spray and warm over medium-high hat.

Add bacon or ham and cook until warmed through, about 2-3 minutes. Transfer to the toasted muffin and keep warm.

Add the egg to the pan and cook until done to your preference, about 3 minutes.

Layer the cheese, arugula, and sliced tomatoes on the side of the muffin with the bacon. Place egg on the other side of the muffin and bring together.
