Dry Brined Turkey

Ingredients:

  • ¼ cup brown sugar
  • ¼ cup kosher salt
  • 3 tablespoons pumpkin pie spice
  • 1 tablespoon ground coriander
  • 1 (12-14 pound) turkey

Directions

Combine the first four ingredients.

Place the turkey on a foil-lined roasting pan with rack and coat with seasoning mixture then chill 24 hours.

Preheat oven to 325° F.

Pat turkey lightly to remove ay excess seasoning mixture; roast per package instructions or until browned and 165° F.

Let stand 15 minutes to rest before carving.
