Divination Wine

Ingredients:

  • 1 liter cowslip flowers (packed tightly with stems removed)
  • 1 liter dogwood blossoms (packed tightly with stems removed)
  • 1 liter rosehips (packed tightly with stems removed)
  • 7 pounds sugar
  • 3 oranges
  • 3 lemons
  • 2 gallons spring water
  • 1 envelope dry yeast
  • 6 tablespoons hot water (not boiling)

Directions

Place spring water in large pot and bring to a boil, add herbs to water. Simmer for five minutes. Now let stand for three days, cover pot with a lid.

After three days, strain herbs through a colander. Squeeze out as much juice as you can, discard leaves.

Add the seven pounds of sugar to the strained liquid in your pot.

Next, slice oranges and lemons leaving the peel on. Remove seeds.

Add sliced oranges and lemons to your pot of liquid and boil for twenty minutes. Then let stand for twenty-four hours. Stir well.

After twenty-four hours, in a small bowl dissolve dry yeast in six tablespoons of hot water. Add this to the mixture. Stir well.

Now strain mixture through a muslin cloth or clean dish towel. Pour strained liquid into wine bottles. Tie pieces of muslin cloth to the top of the bottles or seal with a cork. Do not cap to tightly. Small amounts of gas may form and must be able to escape.

Wine is made after fermentation has stopped and no more bubbles appear in the bottles. Store in a dark place for up to six months.
