Dark Chocolate Sea Salt Bar


  • 2 cups whole toasted unsalted almonds
  • ¾ cup whole roasted unsalted peanuts
  • ¾ cup toasted walnuts (chopped)
  • ½ cup crispy rice cereal
  • 1 tablespoon flaxseed
  • ½ cup honey
  • 1/3 cup brown rice syrup
  • ¾ teaspoon sea salt
  • 1 teaspoon vanilla
  • 1 cup dark chocolate chips
  • 1 tablespoon vegetable oil


Combine toasted almonds, peanuts, rice cereal and flaxseed in a large bowl and set aside.

Combine honey, brown rice syrup, ¼ teaspoon salt and vanilla in a saucepan over medium-high heat, stirring frequently, until mixture reaches 260° F on a candy thermometer. Immediately pour this syrup over combined nuts and stir until evenly coated.

Quickly transfer mixture to a greased 9x13 inch baking sheet and spread evenly. Sprinkle with remaining sea salt.

Cool for twenty minutes. Cut into twenty bars.

Combine chocolate and oil and microwave until melted (approximately 1 minute). Use fork to drizzle chocolate over bars.

Let cool until chocolate hardens. Wrap bars individually in parchment paper and store in an airtight container for up to 1 week.
