Clear Thinking Soup

Ingredients:

  • 3 medium onions (chopped)
  • ΒΌ cup garlic (chopped)
  • 2 tablespoons olive oil
  • 2 cups water
  • 1 carrot (chopped)
  • 1 celery stick
  • Thyme (chopped)
  • Basil (chopped)
  • Parsley (chopped)
  • Dill (chopped)
  • Bay leaf (chopped)

Directions

Cook onions and garlic in olive oil on medium heat until tender.

Bring water to slow boil. Add cooked onions, garlic, carrot, and celery. Cover and simmer for 20 minutes.

Add the herbs to taste and simmer covered for another 10 minutes.

Remove from heat and eat.
