Chicken Nuggets

Ingredients:

  • ½ pound chicken breast (half frozen chunks)
  • 4 ounces Parmesan (grated)
  • A pinch of pepper
  • Salt
  • 1 egg
  • ½ cup flour
  • 2 eggs (beaten)
  • 1 cup bread crumbs
  • Oil for frying
  • ¼ extra breadcrumbs

Directions

In a food processor place the chicken and shred. Place in a bowl. Add 1 egg, Parmesan, pepper, salt and ¼ extra breadcrumbs, mix everything.

With hand form small balls, about 2 inches.

Pass them first in the flour, then the egg, shaking the excess off. Third in the breadcrumbs.

Fry in plenty of oil over medium heat until browned.
