Chicken Caesar Salad

Ingredients:

  • 4 (4 ounce) skinless, boneless chicken breasts
  • 1 head of romaine lettuce
  • Juice of 1 lemon
  • 2 hard boiled eggs
  • ½ teaspoon pepper
  • ¼ cup Parmesan cheese (shredded)
  • 1 cup croutons
  • Dressing
    • 2 cloves garlic
    • ¼ cup vegetable oil
    • ¼ cup Parmesan cheese (grated)
    • 1 tablespoon Worcestershire sauce
    • ¼ teaspoon dry mustard
    • ½ teaspoon salt
    • 2 tablespoons lemon juice

Directions

Preheat broiler.

Process garlic, oil, Parmesan, Worcestershire sauce, mustard and salt in a blender for 15 seconds. Add lemon juice; process until smooth.

Broil the chicken until the juices run clear when the meat is pierced with a knife, about 15 minutes. Cut it into bite-sized pieces; set aside.

Rinse the lettuce leaves and pat dry. Tear it into large pieces; place in a large salad bowl and squeeze the lemon juice over the top, tossing lightly.

Peel and chop the eggs. Add them, the chicken, pepper and dressing to the bowl and toss lightly.

Sprinkle the shredded Parmesan and croutons over the salad.
