Chicken Apple Meatballs with Bourbon Sauce

Ingredients:

  • Meatballs
    • 1 pound ground chicken breast
    • 1 cup Parmesan cheese (shredded)
    • ½ cup tart apple (shredded)
    • ½ cup plain dried breadcrumbs
    • ½ teaspoon salt
    • ½ teaspoon ground black pepper
    • 2 medium cloves garlic (minced)
    • 1 egg (slightly beaten)
    • 2 tablespoons fresh parsley (finely chopped)
    • 3 tablespoons butter (melted)
  • Bourbon Sauce
    • 1 cup bourbon
    • ½ cup brown sugar (packed)
    • ½ cup ketchup
    • 2 tablespoons soy sauce
    • ¼ cup apple cider vinegar
    • 1 teaspoon Worcestershire sauce
    • 1 teaspoon dried thyme leaves

Directions

Meatballs

Preheat oven to 400° F.

Combine all ingredients in medium bowl and mix well. Shape 1½ tablespoon portions of chicken mixture into approximately 20 meatballs.

Place meatballs on parchment covered baking sheet. Drizzle or brush liberally with melted butter and bake in upper third of oven for 20 minutes or until browned and cooked through.

Meanwhile, make bourbon sauce.

When meatballs are cooked, remove from oven and place in warm bowl. Add bourbon sauce and stir to coat.

Bourbon Sauce

Mix all ingredients in medium-sized heavy-bottomed saucepan until well combined.

Bring to boil over medium-high heat. Reduce heat to medium and simmer for 20-25 minutes, uncovered and stirring occasionally, until reduced to about 1 cup.

Glaze should be just thick enough to coat meatballs with thin layer of sauce.
