Cherry Coconut Bars
Ingredients:
- 1 cup flour
- ½ cup butter (medium cold, not soft)
- 3 tablespoons powdered sugar
- 2 eggs
- 1 cup sugar
- ¼ cup flour
- 1 teaspoon vanilla flavoring
- ½ teaspoon baking powder
- ¼ teaspoon salt
- ¾ cup walnuts (chopped)
- ½ cup sweetened coconut (shredded)
- ½ cup maraschino cherries (in liquid, chopped)
Directions
Mix flour, butter and powdered sugar loosely with hands and press in an 8x8 inch square pan. Bake for 10 minutes at 350° F.
Beat eggs, and stir in the all of the rest of the ingredients.
Spread over the shortbread and bake at 350° F for 25-30 minutes. Watch carefully that it is not overdone: should be golden brown, but not pulling away from sides of pan too much.
Cool completely and cut.
