Cheesy Chipotle Roll-Ups

Ingredients:

  • ¾ pound 90% lean ground beef
  • 2 tablespoons chipotle flavored rub
  • ¼ teaspoon salt
  • 1 cup corn
  • ½ cup red bell pepper (finely diced)
  • 1½ cups Colby and Monterrey jack cheese blend (grated)
  • ¼ cup fresh cilantro (chopped)
  • 6 (11 inch) flour tortillas (warmed for easier handling)
  • Vegetable oil spray
  • 1 cup guacamole

Directions

Preheat oven to 450° F.

Place ground beef, rub and salt in 10 inch sauté pan. Cook over medium-high heat for 5-7 minutes or until beef is no longer pink. Add corn and bell pepper; cook 1-2 minutes or until vegetables are crisp-tender. Remove from heat; drain, if necessary. Stir cheese and cilantro into meat mixture. Transfer meat mixture to bowl.

Spoon meat mixture down centers of tortillas, dividing evenly. Fold in ends of tortillas and roll up tightly. Place roll-ups on sheet pan; spray with vegetable oil. Bake 10-12 minutes or until roll-ups are lightly browned and crisp.

Cut each roll-up on a bias into four slices and serve with guacamole.
