Caprese Chicken

Ingredients:

  • 4 boneless, skinless chicken thighs
  • 1 tablespoon olive oil
  • ½ teaspoon salt (divided)
  • ½ teaspoon ground black pepper (divided)
  • ½ cup panko breadcrumbs
  • ½ cup Romano cheese (shredded)
  • 3 fresh Roma tomatoes
  • 16 fresh basil leaves
  • 1 cup Italian blended shredded cheese
  • Cooked pasta and tomato sauce of choice

Directions

Heat oven to 425° F.

Rub chicken thighs with olive oil and sprinkle both sides with ¼ teaspoon each of salt and pepper. Coat thighs evenly on both sides with breadcrumbs, place on rimmed baking sheet, and sprinkle evenly with Romano cheese. Bake 15 minutes.

Meanwhile, slice tomatoes into ¼ inch slices, and sprinkle both sides with remaining salt and pepper.

Remove chicken from oven and top each piece with tomatoes, slightly overlapping slices. Bake another 10 minutes or until chicken is cooked through. Remove from oven, top with basil leaves, and sprinkle evenly with Italian cheese blend. Broil 3-5 minutes, or until cheese is melted and begins to brown.

Serve with cooked pasta tossed in your favorite tomato sauce.
