Burrito Bowl

Ingredients:

  • 1 cup brown jasmine rice
  • 1 pound ground turkey
  • 1 tablespoon taco seasoning
  • Kosher salt
  • ΒΌ cup plain yogurt
  • 2 teaspoons hot sauce
  • 2 cups grape tomatoes (halved)
  • 2 avocados (diced)
  • 1 (15 ounce) can black beans
  • Cilantro (garnish)

Directions

In a small pot, cook rice according to package directions.

Meanwhile, in a large skillet over medium heat, cook turkey until no longer pink, 6-7 minutes. Season with taco seasoning and salt.

In a small bowl, mix together yogurt and hot sauce. (If you want a nice drizzle, transfer to a plastic Ziploc or piping bag.)

Divide rice among four bowls and top with ground turkey, tomatoes, avocados, and black beans and drizzle with spicy yogurt. Garnish with cilantro.
