Breakfast Muesli


  • 1 bag multi-grain medley (uncooked)
  • 1 cup 2% milk
  • 1 small orange (zested and juiced)
  • 1 medium red apple (chopped)
  • ½ cup plain Greek-style yogurt
  • 1 teaspoon vanilla
  • ¼ cup honey
  • ½ teaspoon ground cinnamon
  • ¾ cup dried fruit (prunes, apricots, apples, cranberries, raisins, etc.)
  • ¾ cup nuts (chopped)
  • Seasonal fresh fruit (optional)


Prepare 1 bag of multi-grain medley according to package directions, using milk for water. (If desired, use skim milk, soy or almond milk). Set the cooked rice aside.

In a medium-sized mixing bowl, add orange zest and juice, and chopped apple. Stir to combine. Add in yogurt, vanilla, honey, ground cinnamon, dried fruit, chopped nuts and cooked multi-grain medley; stir until well combined. Cover the bowl and place the muesli mixture into the refrigerator and cool for an hour or overnight.

To serve, top generously with fresh seasonal fruit, if desired.
