Breaded Pork Sandwiches
Ingredients:
- ¼ cup all-purpose flour
- 2 eggs (beaten or ½ cup egg substitute)
- 1 sleeve saltine crackers (crushed)
- 2 pork cubed steaks
- 1/3 cup canola oil
- 4 hamburger buns
- 4 teaspoons Dijon mustard
- 2 cups lettuce shreds
Directions
Place flour in a shallow bowl. Place eggs in a second bowl and cracker crumbs in a third bowl. Dip pork in flour (coating both sides), then dip into eggs (allowing excess to drip off). Finally, dip into cracker crumbs.
Preheat a large sauté pan on medium 1-2 minutes. Place oil in pan; then add pork steaks (one at a time), cook 3-4 minutes on each side or until golden. Repeat with remaining steak.
Coat top halves of buns with mustard. Cut pork steaks in half; place on bottom halves. Top each with lettuce shreds and assemble.
