Baked Scallops

Ingredients:

  • 1½ pounds scallops
  • Salt and pepper
  • 2 tablespoons olive oil
  • 2 tablespoons shallots (chopped)
  • 2 tablespoons fresh herbs (chopped)
  • 2 tablespoons panko bread crumbs

Directions

Preheat oven to 425° F.

Season scallops with salt and pepper, the combine with remaining ingredients.

Spread in a single layer on a baking sheet and bake 8-10 minutes or until scallops are opaque and firm.
