Baked Rotisserie Chicken Roll-Ups

Ingredients:

  • 1 tablespoon olive oil
  • ¾ cup onion (chopped)
  • 1 red bell pepper (chopped with seeds removed)
  • 3 cups rotisserie chicken (shredded)
  • ¾ cup chicken broth
  • ¾ cup sour cream
  • ½ cup cilantro (coarsely chopped)
  • Cooking spray
  • 12 (6 inch) flour tortillas
  • 1 cup Mexican cheese blend (shredded)
  • 1 cup fresh salsa

Directions

Preheat oven to 450° F.

Heat oil in a large skillet over medium-high heat. Add onion, bell pepper, and red pepper to pan, saute 5 minutes. Add chicken and broth to pan; bring to a simmer. Cook 4 minutes or until liquid reduces. Remove pan from heat; add sour cream and cilantro; stir to combine.

Lightly coat 9x13 inch baking dish with cooking spray. Use a slotted spoon to divide chicken mixture evenly among tortillas (about 1/3 cup per tortilla). Roll up and arrange in a single layer in baking dish, seam side down. Pour any remaining chicken mixture over tortillas and sprinkle with cheese.

Bake 10 minutes or until cheese melts and tortillas begin to brown.

Garnish with salsa and serve immediately.
