Baked Potato Soup

Ingredients:

  • ¾ cup butter or margarine
  • 2/3 cup all purpose flour
  • 7 cups milk
  • 4 large baking potatoes (baked, cooled, peeled and cubed)
  • 4 green onions (chopped)
  • 12 strips bacon (cooked and crumbled)
  • 1 cup sour cream
  • 1¼ cups cheddar cheese (grated)
  • ¾ teaspoon salt
  • ½ teaspoon pepper

Directions

In a soup kettle or large Dutch oven melt butter. Add flour and stir until creamy. Slowly add milk and stir constantly until thickened.

Add potatoes and onions and bring to a boil stirring constantly. Reduce heat and simmer for 10 minutes.

Add remaining ingredients and stir until cheese has melted.

Serve immediately.
