Bacon Hot Pot


  • 1½ pounds bacon
  • 1 large onion
  • 3 decent sized potatoes
  • Tomatoes
  • Black pepper
  • Boiling water


Layer bacon, then onions, then potato slices then lots of black pepper then add boiling water, enough to just cover the top layer.

Cook for 2 hours at 200° F in the oven, careful not to let it dry out.

Remove the lid and allow the top to brown during the last 20 minutes.
