Bacon and Broccoli Toasts

  • 12 ounces apple-wood bacon (chopped)
  • 1 cup onion (chopped)
  • 2 teaspoons garlic (minced)
  • 1 (10 once) package frozen chopped broccoli
  • ½ teaspoon kosher salt
  • ½ teaspoon ground black pepper
  • 8 ounces cream cheese (cut in ½ inch pieces)
  • 1 (16 ounce) French bread baguette (cut into 30 slices)

Place bacon in a large skillet over medium heat. Cook until bacon is crisp, stirring frequently, about 15 minutes. Remove bacon from pan with a slotted spoon.

Discard all but 3 tablespoons drippings from pan. Return pan to medium-high heat. Add onion and garlic to pan; cook 4 minutes, stirring occasionally.

Add broccoli, salt, and pepper to pan; cook 1 minute. Remove pan from heat.

Return cooked bacon to pan and add cheese; stir until combined.

Preheat oven to 500° F.

Place bread slices on a baking sheet; cook 3-5 minutes, until toasted. Divide bacon mixture evenly among toasts.

Serve immediately.
