Antipasto Salad

Ingredients:

  • 2 large romaine hearts (chopped)
  • ½ pound salami
  • 8 ounces mozzarella balls (halved)
  • 1 cup artichoke hearts (quartered)
  • 1 cup cherry tomatoes (halved)
  • 1 cup pepperoncini (chopped)
  • ½ cup olives (sliced)
  • Red Wine Vinaigrette
    • ½ cup extra-virgin olive oil
    • ¼ cup red wine vinegar
    • 1 teaspoon dijon mustard
    • ½ teaspoon oregano
    • ¼ teaspoon red pepper flakes
    • Kosher salt
    • Freshly ground black pepper

Directions

In a large bowl toss lettuce, salami, mozzarella, artichokes, tomatoes, pepperoncini together.

Vinaigrette

In a jar fitted with a lid, shake together olive oil, vinegar, mustard, oregano, and red pepper flakes. Season with salt and pepper.

Dress salad with vinaigrette and serve.
