Antipasto Salad
Ingredients:
- 2 large romaine hearts (chopped)
- ½ pound salami
- 8 ounces mozzarella balls (halved)
- 1 cup artichoke hearts (quartered)
- 1 cup cherry tomatoes (halved)
- 1 cup pepperoncini (chopped)
- ½ cup olives (sliced)
- Red Wine Vinaigrette
- ½ cup extra-virgin olive oil
- ¼ cup red wine vinegar
- 1 teaspoon dijon mustard
- ½ teaspoon oregano
- ¼ teaspoon red pepper flakes
- Kosher salt
- Freshly ground black pepper
Directions
In a large bowl toss lettuce, salami, mozzarella, artichokes, tomatoes, pepperoncini together.
Vinaigrette
In a jar fitted with a lid, shake together olive oil, vinegar, mustard, oregano, and red pepper flakes. Season with salt and pepper.
Dress salad with vinaigrette and serve.
